I would do it the way Kevin did but I know you've already removed all the old wiring and have a ready made harness to install.
With less than 10 circuits, I think you'll be able to get it all laid into position in just a day and secured and hooked up the next day. That's doing it at a leisurely pace. You'll be fine once you get started.
