I am sure you know better than I but that was not what I encountered when swapping 160 to 180 and back again. Temp at the radiator was 175 w/a 160. The temp at the heat riser stayed the same though, very hot.
What was the ambient outside temperature that day? The reason I ask is that on a cold day, the thermostat will close at whatever it's rating dictates in order to maintain a hot enough engine temperature for maximum performance in cold weather.
