Whether it is a 160 or a 180 has no bearing on what your maximum temperature will be. One just opens sooner than the other.
Water jacket crud, radiator crud (internal or external), bad water pump vane (never heard of that on a Stovebolt), air pocket in the head, and incorrect timing are what can cause extreme high engine temperature.
