I've rewired trucks both ways. The "stock"-ish harness was fairly easy to install and required, since most of the original wiring was gone, burned or worn.
I got about $300 into a $200 rewire by running everything separately. It worked just as well as the pre-fabbed harness, but did not look as pretty.
