Buck Man, Welcome to the "Bolt", a great bunch of folks here all ready to help. I love it when another 4 eyed Task Force joins the group. I really thought a lot about cutting the crossmember out and decided against it. The crossmember is also the mounting point for the rear of the front springs and the support for the cab mounts. If you have already removed it there should be much of a great concern, lots of trucks have had the crossmember cut out with no issues. If it's still in place only cut out the center section and leave the riveted mounts, this way everything still lines up.
I fabbed up my rear trans mount and side engine mounts years ago with just what I had on hand. Using CPP mounts is fine, they have some great products and their customer service is great. I would think hard about not mocking the engine and trans up, a lot clearance problems can be avoided by measuring things ahead of time. I placed my engine and trans an inch forward to add room at the firewall for an HEI. As it turns out I went with a smaller MSD distributor but still liked the added clearance. You also need to find the correct distance from the radiator to the engine fan or water pump. The reason I say mocking up will find any issues is I had to make different side engine mounts as well, I used a different set of headers when I set the motor mounts up, it showed when I tried to mount the new set. One step forward, two steps back. It all worked out for me as the new headers clear everything.
I hope you can avoid the mistakes I made along the way, taking the truck completely apart being the worst of it. I have kicked myself over and over for that, I could have just updated things as I went along and been able to enjoy the truck. The Young and Dumb version of me thought he knew better, he didn't.
