I'd suggest running a fairly large diameter piece of conduit around the perimeter of the entire shop, at about the level of the angle braces, and dropping off to workbench height with individual circuits using somewhat smaller conduit. All this can be surface-mounted with elbows and tees with cover plates for access for pulling the wire. Some electricians don't like to do it, but on any electrical wiring that I do my self, I have a habit of using wire one gauge larger than the electrical code specifies- - - -for instance, use 8 gauge instead of 10, 12 instead of 14, etc. Material cost is a one-time expense- - -voltage drop is forever!
