Jay, I would highly recommend going with 200 A box up front, even if you use 1/2 of it initially . I recently added a dedicated 220 V for an A/C (which as nice a shop as you're building you will definitely want for those sweaty summer months). If I add anything else, I will have to add a sub panel, so wish I would have gone with a bigger panel up front.
