I'm looking forward to see how this goes. Could you start a thread in the project journals section? I put my '47 3800 panel truck on a '88 K2500 frame. The tires do not stick out past the fenders. I maintained the stock height. I thought about using a suburban frame, but it was not flat enough, and too short. The truck frame does dip down under the cab, but no modifications to the bed were needed. I used the wiring harness from under the dash as well as the one on the engine, you might need to to connect to the ECM.
