Putting a motor together is not hard, or complex. A master rebuild kit for a 350 is less than $600 for a kit BETTER specs they list (and that 'performance' Summit engine doesn't even include roller cams). Complete rebuild kits are $250-ish. Performance roller kits $600-ish.
Oh, and I can do all of what you said. For less money, and get a better motor. With change.

In 24 months are you gonna put 50k on a motor in a custom hotrod? Its gonna sit half the year. Is a 3-4x premium over DIY worth about 8 months of actual driving warranty?
