Getting back to the level of the engine, just eye ball the carb base and set it where it level with the ground when you get all the weight on the truck. It doesn't have to be right on, but thats a good place to start. Since its a Field truck, driveline angles should be close enough if the carb is setting pretty level.
When lifting the engine, you might try a couple of heavy nylon straps, they will conform to the surrounding engine parts with out denting them.
