Mike, a couple of things you may try regarding the engine stalling out because of assumed fuel delivery is to by pass the tank & fuel pump. I've used a graden sprayer connected to the carb. If you have a fuel filter, then you probably have a smaller rubber hose in the line. I take the nozzel off the sprayer and connect the sprayer to the rubber hose. Put gas in the sprayer tank, pump up the sprayer just a few pumps, lock in on, and start the engine. Before you start the engine, remove the fuel line from suction side of your fuel pump. I also put the fuel line which goes from the pump to the carb in a jug, reattach the suction line to the pump to see how the fuel pump is working. The garder sprayer will let you run for a hour to verify your fuel delivery. I'd suspect the line out of the tank is partially plugged. Since you have another truck, swap out the coil, as I have had times when an engine would run OK until the coil got hot and then would just cut out and then won't start until the coil cools down.
