I would recommend Carter W-1, 483's from '48. They will be expensive to get running but will perform better than anything else. But since you are going back to stock, use the good Carter you have.
With dual carburetors, both absolutely must be identical to run correctly. They must be same model number, jetted the same and adjusted the same, right down to using proper gauges, no guessing, no eye balling, gauge setting. It's a lot of work that must be done right, and the engine must to be in good shape with an ignition system working correctly.
