I would install a correct single carb intake manifold on it and enjoy driving the truck without worrying about the carburetor.

If you're serious about fuel injection, look at the Holly Sniper setup for 6 cylinder Mustangs. Of course you'll still need a single carb intake manifold so might as well get one and install a single carb. If you still don't like it, you're just a bolt on part away from fuel injection.
