What a fine looking truck. I'm sure you're going to have it back 'as new' when you are done. With the help of all the good folks on here you'll accomplish that for sure.
You asked about the order of restoration and, not that I'm an expert, I would think doing the mechanical stuff first, then the interior and paint would be the way to go. You never know how doing engine work, or other, might just scratch up that shiny new paint.
