57 chevy truck with 235. Am changing to a non-stock carb and will need to use cable actuation. Need advice on converting stock pedal/linkage arrangement to cable, etc. Any successful stories out there? Any suitable "kits"?

Lokar has the setup you need. Google "Eliminator Floor Mount Throttle Pedals". I think Summit and Jegs sells them.

I ended up at pick a part and harvested several pedal/cable setups from various trucks. Then picked the one that worked the best for my app and shaped a chunk of hard maple into a mounting block and bolted the pedal to that. It works very well now on my small block and q-jet. Not sure about your specific app though.

I was thinking of using the Lokar spoon setup on my 57 with a 283 and Edelbrock 650. Besides looks, is there a difference in the spoon and eliminator floor mount pedal?

other than appearance that is the only difference spoon and eliminator . have just fitted eliminater to my sons 56 chevy an easy job looks good black pedal black carpet needed a 48inch cable to reach the holley everything mounted up really good used lokar double return spring and mounting bracket. my son rhys preferrred this type ovrer the spoon which I have in the 50 as it is shiny and his foot slips off it on the highway so eliminator it is

sorry forgot to mention mounting of the pedal's is different . spoon has 2 bolt mounting with a cable exit thru the firewall 3 holes in total , eliminator has one exit point thru the toe board that incorporated 4 mounting holes no hole required for cable
