So long as you have brake lights, you should be okay without blinkers. Make sure that you brush up on your hand signals, though.
I'd definitely take extra parts... At least a fuel pump and the generator/regulator pair won't hurt!
You may want to find another carb to bring -- or at least a rebuild kit for the one that's on there. Plugs, wires, cap, rotor, points, and condenser, too.
If she sports a fuel filter, bring one of those along for the ride also.
