If you are going with a restoration then rebuild a 307 otherwise I'd have to ask why? A 305 or 350 is better and easier to find parts for and build specs for the application you are looking for. A remanufactured 305 or 350 will only run you $500- $700. You'll spend that rebuilding the 307.
