Although I heartily agree with Bill (red58), would it be difficult to stick the Rochester back and and see what happens. Your first post alludes to the fact that this problem came with the carburetor swap.
I can't help but think that a carburetor hard start situation would carry over into a idling or running glitch! Once your rig does get started, it seems to run and accelerate fine...almost.
