Nothing I love better than looking at an original, or restored to original condition/looks but those are getting very hard to come by. Both of my projects is/were almost basket cases. So, I don't call them "restorations".....I call them "Resurrections". The frame and cab are about the only thing left on my 37 that I "originally" started with!!
So, as someone mentioned, stand back, take a loooong look at what you HAVE and then decide what you WANT and go from there. I think for most of us it really depends on how deep our pockets are because...."satisfaction is cheap at any price"..if you can afford it.
