I had the same problem when I got my '65... but they never wanted to give me any cash for their high dollar ideas or help me turn any wrenches.
The 350 is up to you, but you might want to putt around with the 6 first, get all the mechanicals running good before you get 'custom/restoration fever' as I call it, and wind up with a bunch of parts.
You can really get to know stuff about an old truck, just driving it around, trying to get the little things working.
