The fact that it's heating up so fast at startup leads me to suspect that exhaust gas is entering the cooling system through the head gasket.

Buy one of those test kits that use blue fluid in a tube that sits on the radiator filler neck while running the engine. If the fluid changes from blue to yellow, you have exhaust gases in your cooling system.
