Yes, oversize pistons would increase the compression ratio a touch over the calculated 6.25, but that requires additional machine work. The oversize Buick pistons would still be 1/8" below the deck. I doubt it would be possible to take that much off the deck. If I were to use a stock 216 piston, it would be 3/32" ABOVE the deck. I'm investigating whether it would be possible to cut that much off the crown of a stock piston. I haven't looked at 292 rods, but I don't have any of those. I can get 40 undersize rod bearings for the 235 rods, and would be able to increase the stroke by about 15 thousandths. [on edit]It looks like even the standard size Toyota diesel pistons would require boring the cylinders. When I don't have the machine tools like you do, Jerry, it gets real expensive.
Otto, the spark plug position doesn't really have anything to do with the piston height, as the fuel air mixture should be essentially uniform throughout the combustion chamber, and the spark plug can ignite it wherever it is.
