If it has a 2 piece driveshaft it could be the drive shafts out of phase. The carrier brg could be bad but certainly that would be discovered when the u-joints were replaced. The pinion angle might be wrong or the spring bushings worn & letting the rear end shift.
If you sit still & race the engine in neutral can you feel it?
I can't imagine the clutch adjustment causing this.
