Be very careful with the tube connected to the temp gauge, it is gas filled and if you break it it will never work again. The gas and amp gauges will most likely just have bad connections or broken wires somewhere. The oil pressure gauge should be fairly accurate whether it's measuring oil or air. When you ground the sender lead it should register empty.
The ammeter is easy to test. Hook it up in series with a load and see that it registers. Reverse the polarity to test the opposite direction.
The temperature gauge can be tested with a pot of boiling water.
