Also, if it has a flat tappet cam, did you break in the cam first? Very important, you should.

Set the idle stop screw up a little after it warms up enough for the choke to go off. A 350 pulls down quite a bit when you have it in drive. I've never seen a carb yet that didn't need some adjustments after it is put on the engine.
