So, my 1 3/4" carb actually measures 1 11/16" at the throttle plate. After sourcing a local (rebuildable) replacement, it measures the same. I guess all this stuff about a 1 3/4" throttle plate on the 261 is nonsense??? Its bigger than a 235, but not THAT big.
Or is there another carb that I should be looking for???

I think you're misreading the specifications. Isn't it the VENTURI- - - -not the throttle plate, that's supposed to measure 1 3/4 inches?

Normally a venturi will start large, shrink in size, then taper back out to a larger throttle plate. Larger. To install a smaller throttle plate would be detrimental by design. It won't draw fuel properly. Call it an assumption on my part, but it was quite a surprise to see the small throttle plate. Obviously it was intended to idle well and drivability doesn't really matter.
