There is a fellow with a Pontiac engine in a truck that installed the manifolds on the opposite sides so the outlets dropped out the front, not the rear. His pipes then ran under the front crossmember but away from all steering. Maybe you could find a manifold with a different outlet location and do something similar. Then the exhaust pipe could be plumbed down the passenger's side away from the steering column. Odd-looking, but effective!

I had issues keeping the collector gaskets from burning out. (even with the deadsoft aluminum ones). I would print out some pictures and go to a wrecking yard and just poke around, looking at some different chevy manifolds. As suggested above, maybe swapping them side to side? My 588 2-ton, they ran exhaust out the top of the manifolds, through the inner fenders, and put stacks out the top of the fenders! It was a grain truck used on the farm though and they didn't want to catch the fields on fire. '47 GMC 1 ton w/ 302, NP-540, 4wd, full width Blazer front axle.
'54 GMC 630 w/ 503 gasser, 5 speed, ex fire truck, shortened WB 4', install 8' bed.
'55 GMC 370 w/270, 420 4 speed, grain, dump bed truck from ND. Works OK.
