Stainless on stainless will gaul and lock up in a heartbeat, no surprise there. Next time use never or anti seize.

Are you sure you want stainless U-bolts? Are they as strong and tough as genuine suspension U-bolts? If you're not dead sure better stick with the proven steel ones and save stainless for when looks are more important than function.
