The last time I had a chevy do that was with a friends 61 impala with a 348 in it.
we suspected trouble with the pump pickup so removed the pan to find the strainer and pickup tube had fallen out of the pump and on a turn the oil would rush away from the hole in the pump.
Fix it soon or you will regret it.
Probably adding a couple quarts to much oil will buy you some time before disaster.
No it won't hurt to have too much oil in it compared to starving the pump and bearings.
