Yes, you can bypass the booster, but it will make your feet hurt stopping it. The booster makes pushing the brakes easier but it has nothing to do with making the braking better.

As noted above, that's a lot of weight to stop by foot pressure alone.

All of the larger trucks came with brake boosters, most likely Bendix or Midland. You can even trade them in for replacements at Napa and such if need be.
