I go along with the idea that either the thermostat is installed upside down or is not the right thermostat for the truck. It was running cool without a thermostat and it wouldn't have done that with a clogged radiator, nor would putting a thermostat in cause the radiator to clog. The top hose not being very hot tells me that water isn't flowing in sufficient quantity through the thermostat.
