Just make it a bunch of smaller projects. Don't rip it all apart. Take small bites like the brakes. Then the gas tank, Then the engine compartment, then the suspension, etc. etc.
The more you rip it apart, the more confusing it can get. Parts get lost or misplaced easier, interest is lost. You might want to keep it in driving condition for the most part so you can use it and upgrade as time allows. There are a lot of lost projects out there that end up for sale or just end up sitting forever because too much was bitten off, or interest was lost, or lack of money to finish.
