"Technically" they should be gray.
Some of the trucks did have 283's that were originally slated for a passenger car because of availability, thus there were orange V8's. Most people repaint them orange if they rebuild them.
P.S. Sometimes the orange color didn't come out the same shade every time, and was more red than orange.
