Maroon for the seat cover, arm rests, and the door panels was definitely an option for most if not all ADs, and man does it look nice. Jim Carter sells a nice representation of the original maroon vinyl for the seat and the door panels (these are sold as a piece of vinyl which you glue onto the cardboard).
I went with the brown headliner and it looks very nice.
