The U-joints don't care what angle from the ground, they care that the front joint is bent the same as the rear joint, within a degree or less. This helps the shaft run smooth and u-joints last longer.

So again measure your actual situation with truck loaded as it usually is, and weld spring perches to suit, make transmission and pinion parallel. (For more details and exceptions read the manual)
