Ron Francis wiring makes a electric fan controller (AR-67) that uses a thermister temp sensor that is soldered into a bolt lug. Install the sensor via one of the T-stat housing bolts, set the controller at 230* and connect the warning light to the fan on relay contact and you're done. I have this set up to control my electric fan in my '56, works great!
