Yes, you can use the adapter, and yes it can be made to work.
Will a two-barrel work better through the adapter than a one-barrel? NO, in fact it cannot not work as well, as the lower velocity in each of the venturii of the two-barrel will lower the efficiency of the two-barrel.
For best results (if you NEED more carburetion):
(A) Use a larger one-barrel
(B) Fabricate a two-barrel manifold for the two-barrel of your choice.
(C) Use a multiple manifold with multiple carburetors
