Everything will fit just fine, as is, if you are in fact doing a "restoration".
Changing tire types and sizes and then changing sheet metal to accommodate those changes... that's great. When that happens personal preferences come into play.
So to judge someone by saying they are "taking the easy way out", well, that sure sounds elitist, especially seeing how you just posted "
