Couple questions:

As mentioned above, will the truck run idle without issues?

Is there any backfiring from the tailpipe or carb?

Taking the fuel line off at the carb will test fuel flow. As mentioned above, if it will run without load then acts like a mad child on the road it could be vacuum advance not working or fouled points.

Two simple test. Sitting idle, stand on the passenger side of the truck and have someone goose the gas. Watch your distributor, as the throttle is pressed, the distributor should rotate. If not, bad vacuum advance.

Second test is to remove distributor and look at the surface of the points. If they are not smooth and shiny, that could be the issue also.
