Noticed each side of the washers has a different diameter (never noticed that before!). I never noticed a different diameter either but I'd assume they way they were put on at the factory is the way they need to be installed. Anyway that's the way I've always done it & never had an issue arise.

It's there to transfer heat as well as to seal pressure. I've been putting the flat side (larger diameter) toward the plug for 50+ years. It was explained to me that the radiused side is supposed to flatten and conform to the shape of the sealing surface of the head, and should be crushed about halfway by the tightening force, not flattened out completely.

The radiused side compensates for an uneven surface. You see a lot of crush washers on aircraft engines. However on an aircraft engine they are only used once. | | |
