Is there any advantage of having 6 (or 8) over 5? I've seen many trucks for sale that are 6 or 8 lug and some wheel companies offer their wheels in 6 lugs but was wondering if there was an advantage of one over the other or is it personal preference.

If it has 5 lugs, that means some work has been done... Changing spindles, IFS, axle swap, etc. That may raise the price and may be evidence of a welded-in clip. Clips are popular ways to change the suspension, but beware. If they are not done well, walk away.

I've got 8-lug wheels on my 3/4 ton and my options are very limited, which is exactly why I do not yet have an independent front suspension on my truck.

It is needed for commercial/heavy vehicles. Look at new pick-up trucks, the smaller ones have 5 lugs, 3/4 or 1-ton have more lugs.
For a hobby vehicle, even if you sometimes put some plywood in the back or tow a camping trailer on occasion, having more than 5 lugs will be more a hassle than anything else as mentioned earlier while not giving you any benefit.
