I want to keep my '51 Chevy 3100 looking original but want radial tires.
What size tire works best? Thinking 16" x 6" wide rims. Any suggestions?

I use 215/85 16LT on my '54 burb. I like the way it stands and rides.

Not trying to hijack the post but,did you Pete or Cletis use inner tubes? I've seen that suggested before with radials. About to shop for my 3100 too.

No tubes in modern radial tires some say they do but You're going to have a hard time finding a tire shop that would install them ,I didn't and I'm having no trouble with my tires ,take the tires off then clean the inside of the rim remove all and any rust sand it down good make sure where the tire seals is clean.

I didn't use tubes either. I had new wheels from Stockton put on stock centers.

55k miles on a daily driver only vehicle, used Michelin 215 85R 16's look stock. I originally had a gently used set that I put 45 K miles on and they were still (barely) legal when I bought the new set. Stock rims no tubes, no flats no problems 10+ years.
