How long should it take for the engine to reach 180 degrees?

depends on the value of your thermostat, some motors with a 160* stat never will reach 180 - if it's a 180 or higher, shouldn't take long but will vary with the particular engine .... and don't trust your dash gauge, check in the rad with a good thermometer or use a laser thermometer to check various areas of the rad and engine
