Rather than replace the carb you might look at an economy oriented tune-up. A well set up four-barrel should deliver better economy than most single barrel carbs if your driving for economy.
Try adding a vacuum gauge and driving for max vacuum.

One problem you will have going to a single carb is that intake. No real good or efficient way to adapt a single, best bet would be a different manifold. Another thing you might look at, a smaller 4 bbl, like a Holley 390.
