Or do I just loosten the packing nut and slide the transmission off of the splines?

Completly undo the ball nut(collar)and be sure to use the 2 bolt holes specified in the shop manual and the whole thing will balance. If you weld 2- 8" long 1/2" nc bolts to 2 rings you don't even have to take the valve cover off. A search will find you the 2 holes to use.

I think what you describe would work; however, you would be sliding the u-joint yoke (not the transmission) off the splined end of the driveshaft.
You could do it your way, by loosening the threaded "cap" at the rear of the u-joint cover/bell, or, by removing the 4 bolts that hold the u-joint cover/bell and sliding the cover/bell back on the torque-tube.
You will need more clearance space in the front of the engine but most likely you will have the radiator, if not the grill (and hood), off the truck.

I will pull the 4 bolts and the install should be a little bit easier. And I have the whole front end off the truck as we intend to do paint work with the engine out. Oh and I did mean slide the yoke off the propeller shaft, I was wr---wro--wron-- mistaken.(see my signature at the bottom of this post).
