I have heard that Jim Carter's seat upholstery kit is incorrect as the piping on the seat cushion is incorrect. Does Jim Carter still supply these same seat kits or have they changed?

Who supplies a proper replacement seat upholstery kit?

Try LeBaron Bonney, not sure if that is spelt right. I have a catalog at home if you can't find them via searching.
