I do not know what gears are in rear end of my 65 C10. I will have TH350 rebuilt and install it myself. What are my options on getting the speedometer to be accurate. In case I need to, How difficult would it be to remove the cover on differential and find out what the gears are?

Drive it on the interstate & compare the odometer reading with the mile markers. If you go like 3 miles & the odometer shows 3.3 miles remove the gear behind where the speedo cable goes in. The # of teeth is written on it. Get agear with about 2 more teeth. Less if it loses tenths.
