Can a 2 ton cab and front fenders and hood be used for a 1/2 ton truck or are the fenders and hood bigger? I am new to these trucks and I am wanting to build one on an s 10 chassis but only finding 2 ton trucks. thanks

The fenders, grille, bumper, and hood are bigger above 1 ton, but the cab is identical.

Use a full size truck frame then, since the fenders are longer & wider it'll fit better. As Dave said 1/2-3/4 & 1ton stuff is all the same...Joe

Or it gives you room for really wide wheels and tires when on an s-10 frame.

That's more like really really, really, really wide wheels and tires when on an s-10 frame. I say this because you have to run at least a 8" rim and maybe even with a one inch spacer behind the rim. Even w/just the 8" rims there is something like 3-4 inches between the tire & fender.
A tall spindle swap using full size GM spindles could be done but then a new upper control arm has to me bought or find someone to modify the stock one. With the swap you get 11 or 12 inch rotors & the tire/wheel is pushed out from 1" to 1.5".Joe
