180 degrees is typical. Mine runs at the mid-point of the gage.
Make sure it is facing the correct way.
You can check it in a pan of water, with a cooking thermometer for verification. Put it on the stove and measure the temp when it opens.
You might also consider your sending unit and/or gage ground. It is possible the thermostat is working properly, but your readout isn't accurate. I'd do a cal-check to isolate the issue.
