Ok,...outside sealed, inside sealed,...walls off and painted inside. I want to put insulation in,....if I seal this air tight, is this a bad thing ? Worried about future mold etc. Cheerz!

Dyna Mat or equivalent? How much insulation are you looking for? Also, look into industrial foam insulation with foil facing and adhesive backing. http://www.mcmaster.com/#catalog/114/3424 would be one place to get it. I dont think you can ever get it air tight.
